An Israeli food tech startup that makes milk and other dairy products from mushrooms has received a “letter of non-consideration” from the U.S. Food and Drug Administration (FDA). Haifa-based ImaginDairy bioengineers milk proteins to produce a wide range of dairy products using mushrooms instead of cows. ImaginDairy recreated these proteins in the lab to produce a full range of dairy products using a process called precision fermentation.
Founded in 2020, the company leverages over 15 years of AI research from Tel Aviv University to develop milk alternatives.
The company says the product tastes the same as the original. It has the same texture and nutritional value as traditional dairy products, but the company says its replacement is cholesterol-free, lactose-free and hormone-free.
Production is intended to be sustainable and environmentally friendly to reduce greenhouse gas emissions, land and water use, and other environmental parameters.
“This approval means that the FDA recognizes the safety of our high-quality dairy protein. We are now offering this innovative ingredient to food companies to help them consume it without relying on traditional livestock.
